Spicy Ginger-Sesame Noodle Bowl
- 8 ounces spelt angel hair pasta
For the dressing:

1 tablespoon freshly grated ginger

Freshly squeezed juice of 1 lime (about 1 tablespoon)

2 tablespoons toasted sesame oil

2 tablespoons rice vinegar

1 tablespoon tahini

1 tablespoon creamy almond butter

2 teaspoons chili garlic sauce (available in good grocery stores)

2 teaspoons minced fresh garlic

3 tablespoons tamari (low sodium if possible)

1 cucumber, peeled and finely chopped (about 2-3 cups)
For the garnish:
- 1 bunch sliced scallions
- ½ cup fresh cilantro, lime wedges and black sesame seeds
How to Prepare
Cook the pasta according to the package directions, about 8-9 minutes, or until tender. Drain the pasta in a colander and run water over it until it is cool. Let it drain in the colander, and stir it occasionally until all the water has drained away.
Combine the dressing ingredients in a large bowl. Whisk well until the tahini and almond butter are smoothly incorporated. Add the pasta and mix well to combine (tongs work well here).
Garnish each serving with lime wedges, cilantro, scallions and black sesame seeds.
