Roasted Vegetable and Coconut Milk Soup

To make this tasty and nourishing soup, you will need to preheat your oven at a temperature of 350 °F and arrange the chopped vegetables that you will use in the soup in a tray and put it inside the oven.

Make sure they’ve been drizzled with an ample amount of olive oil before they roast.

While that’s being done, take a pan and saute garlic and ginger in it with butter for a few minutes and add coconut milk.

Once you have all the ingredients, take the cashews, milk and a little vanilla, put this into a blender and blend it well.

Pour the resulting mixture into a bowl and add the remaining ingredients on it like toppings.

You can serve parfait now or chill it for later use.

Crunchy Quinoa Salad

To make the Crunchy Quinoa Salad you’ll need quinoa, cauliflower, butternut, olive oil, cucumber and carrots, parsley, mint, pumpkin seeds, lentils, lemon vinaigrette, salt, pepper, mustard, pomegranate molasses and some fresh lemon juice.

To make this delicious salad, you will need ingredients such as the zucchini, salt, black pepper, garlic, beans, peas, red chilli, mint, virgin olive oil and salt.

The Zucchini's are grilled first which give a nice smokey flavour. Sprinkle some salt over them after they’re grilled and head over to the other ingredients. 

Make sure the red chilli has no seeds before using them. Chop and mix the chilli with the garlic and sprinkle them over the grilled zucchini.
