Alkaline Chocolate Desserts

 

Serving sweet treats doesn’t have to be a challenge when you’re eating an alkaline diet. These delicious dark chocolate desserts pair well and are loaded with alkaline ingredients, plus they’re simple to make. The bark looks as great as it tastes, and you can vary the toppings, too. Serve the bark and strawberries together for an even prettier presentation.

Goji berries add a vibrant color along with a high level of antioxidants and alkalinity, while the hemp hearts contribute their super nutrition. Use roasted pumpkin seeds with a hint of sea salt for an added level of flavor. Dried blueberries add a nice depth of flavor, and you can add dried cherries if they’re on your list of favorites.  

Use organic strawberries (always!) at their peak of freshness and you’ll be rewarded with juicy treats that will please any eaters.

Dark Chocolate Fruit Bark

  • 7 ounces dark chocolate, vegan, 60%-70% cacao
  • 2 tablespoons each:
  • -hemp hearts
  • -dried goji berries
  • -dried blueberries
  • -pumpkin seeds, roasted and lightly salted
  • Baking sheet lined with parchment paper or a Silpat

Break or chop the chocolate into pieces about 1” square. Melt very slowly over simmering water in a double boiler or in a microwave. When the chocolate is just melted, add the remaining chocolate and stir gently until all the chocolate is melted. You may have to re-heat if for a few seconds to melt all the chocolate. Do not heat the chocolate past “just melted” or it will separate.

Have all the ingredients next to the baking sheet.  Pour the warm chocolate onto the baking sheet and spread it evenly to a thickness of about1/4” (a silicone spatula works best). Quickly sprinkle the toppings evenly over the chocolate. Chill the entire tray in the refrigerator for 10 minutes.

Take the tray out of the refrigerator and carefully peel the bark from the paper or Silpat. It should come off in one piece. Break the bark into pieces abut 2” by 1”; it will break unevenly but this is what makes it look so inviting. Chill in a covered container until ready to serve.

Makes enough to serve about 6-8.

Dark Chocolate Dipped Strawberries

  • 12-14 medium/large organic strawberries
  • 3 ounces dark chocolate, 60%-70% cacao, vegan

Rinse the strawberries well and dry gently. Line a flat plate or tray with parchment paper. One at a time, dip the bottom end of each strawberry into the melted chocolate and place on the parchment paper.  Chill the strawberries for at least 15 minutes. Keep refrigerated until ready to serve.
